This pasta is similar to Fettuccine in thickness but is less wide. Many describe it as a "flattened spaghetti". Linguine is usually served with light sauces such as pesto and often paired with seafood. This pasta comes from the region of Italy "Liguria" and is considered one of the most traditional kinds of pasta.
All D'Agostino pasta is made in-house using the "delicate" method developed centuries ago in Palermo, Sicily. Small quantities of pasta are extruded through bronze dies created specifically for each shape. The pasta is carefully looped over wooden rods, straightened, then air-dried in wooden cellars.
