Chicken stock, carrots and cheese come together in this dish as the most flavorful soup. There’s nothing better than comfort food on cold winter days and this recipe can be prepared in 30 minutes.

Ingredients for Creamy Chicken Soup with Ditali Pasta
1 pound of Dagostino Ditali Pasta 1 pound of Rotisserie chicken meat, shredded 2 teaspoons of Dagostino Extra Virgin Olive Oil 2 cups of “The Trinity” (this is ½ cup chopped bell peppers, 1 cup onion and ½ cup celery) 1 cup of carrots, sliced 2 large cloves of garlic, minced 2 tablespoons of Italian seasoning |
1 teaspoon of fresh lemon juice 4 cups of low sodium chicken broth 1 bay leaf 1 cup of softened cream cheese ½ cup of heavy cream 1 ½ cups of shredded cheddar cheese 1 cup of baby spinach Salt and pepper to taste Parmesan cheese to garnish |
Directions for Creamy Chicken Soup with Ditali Pasta

First, take your rotisserie chicken and pull off the meat from the chicken thigh, chicken breast and chicken wing; discarding bones as you do so. Then set chicken meat aside. (The meat should be shredded into bite size pieces.)

In a large pot, heat your olive oil on medium heat and add “The Trinity”, carrots, garlic, and Italian seasoning into the pot, sautéing for 5 minutes or until fragrant and tender.

Add cooked rotisserie chicken and lemon juice, continue cooking for 3 minutes.

Add broth, cream cheese, bay leaf, and heavy cream to pot. Cover and bring to a boil, let it cook for 15 minutes. If soup is too thick for your liking, slowly add more broth until you achieve your desired consistency.

Reduce heat and add Dagostino Ditali Pasta and cheddar cheese. Let simmer until pasta is cooked to al dente, about 5 minutes for our handmade pasta.

Add spinach to pot and cook stirring until wilted.

Add salt and pepper to taste and garnish with Parmesan cheese and serve when it’s cool enough to handle, but still hot.

Our founders, the Fresina Family, were some of the original lemon farmers in Sicily during the early 19th century. During that time, Sicilians created settlements in New Orleans as citrus traders and brought pasta with them on their voyage. The Fresina Family felt right at home in Louisiana which led to The Fresina Macaroni Manufacturing Company being born in 1926. We continue to stick to our Italian roots by producing our pasta the old-fashioned way right here in New Orleans. Our centuries-old delicate method consists of small quantities of pure semolina pasta cut through bronze, carefully looped over wooden rods, straightened and the air-dried in wooden cellars. We are dedicated to preserving our family traditions and Italian customs for many more generations to come.
